My heroine, Rosalie Walker, doesn't need rescuing, thank you very much, but she has spent much of her life taking care of her late mother. When Morgan Danby comes into the story, one reason among many she distrusts him is her not-entirely-unfounded fear that he's trying to buy her in order to create a family for his step-brother's son, whom she'd been raising since the boy's mother died.&nbsp;</span><br /><br /><br /><span>As part of Morgan's campaign to persuade Rosalie to marry him, he buys her two very expensive dinners. After one of them, they order the signature low-calorie dessert of a (fictitious) Malibu restaurant that caters to movie stars -- angel's food cake and lemon sorbet. Rosalie is suitably impressed, but I prefer my desserts to at least taste as if they have lots of calories.&nbsp;</span><br /><br /><br /><span>The cake my grandmother always made for my birthday (a signature dessert of sorts) managed to taste rich, as well as yummy, and still be moderately not-unhealthy. Starting with angel's food cake the way my made-up restaurant did, cuts calories without cutting taste, and the store bought kind is, in my experience, almost as good a homemade, so it cuts preparation time, too. I can't call what follows a "recipe," since Grandmother made it up as she went and I learned to make it by watching her. Still, it's something to try next time you see strawberries in the store. Spread roughly one-quarter of the whipped cream over cut side of the bottom half and arrange roughly one-third of sweetened strawberry slices on the whipped cream.&nbsp;<br />4.&nbsp;</span><span>Carefully put the top half of the cake on the bottom half and frost with the rest of the whipped cream. Arrange strawberries on top (and around the sides, if wanted).</span><br /><span>5. Chill thoroughly and serve cold. It&rsquo;s too dangerous - I&rsquo;ve got a sweet tooth and would just polish the lot off on my own. But when the family are home carrot cake is the out-and-out favourite.</font></span><br /><br /><br /><span><font size="4">One of the great things about writing my Tippermere books has been able to include all those important village events. In &lsquo;Country Affairs&rsquo; there was the charity cricket match and auction, and &lsquo;A Very Country Christmas&rsquo; had the Boxing Day meet. And when I was writing &lsquo;Country Rivals&rsquo; I knew there just had to be a village show. And no village show is complete without cake&hellip;</font></span><br /><br /><br /><span><font size="4">Lottie&rsquo;s contribution to the country themed bake-off style show-stopper competition was a carrot cake &ndash; shaped like a carrot. Which is just about the level of my baking these days. I can&rsquo;t believe I used to spend hours making Thomas Tank and Thunderbird cakes!</font></span><br /><br /><br /><span><font size="4">So here&rsquo;s one of the best recipes I&rsquo;ve found (carrot flavoured, but not carrot shaped). It&rsquo;s gooey on the top, and soft and light in the middle &ndash; and I&rsquo;m just wondering if I&rsquo;ll get away with packing some of it in my rucksack when I head back to Barcelona.</font></span><br /><br /><br /><span><strong><font size="4">Paul Hollywood&rsquo;s Ultimate Carrot Cake&nbsp;</font></strong></span><br /><span><font size="4">I love this recipe because it&rsquo;s simple, is very light (which a lot of carrot cakes aren&rsquo;t) &ndash; and always works!</font></span><br /><br /><br /><span><font size="4">155ml sunflower oil</font></span><br /><span><font size="4">230g self-raising flour</font></span><br /><span><font size="4">1 tsp baking powder</font></span><br /><span><font size="4">1&frac12; tsp ground cinnamon</font></span><br /><span><font size="4">&frac12; tsp mixed spice</font></span><br /><span><font size="4">&frac12; tsp ground ginger</font></span><br /><span><font size="4">230g light brown muscovado sugar</font></span><br /><span><font size="4">Finely grated zest of 1 satsuma or mandarin, plus strips to decorate</font></span><br /><span><font size="4">100g pecans, halved</font></span><br /><span><font size="4">260g carrots, coarsely grated</font></span><br /><span><font size="4">3 medium free-range eggs, beaten</font></span><br /><br /><br /><span><font size="4">Preheat the oven to 180&deg;C/fan160&deg;C/gas 4. Grease an 18cm loose-bottomed round cake tin and line the base with baking paper. Sift the flour, baking powder and spices into a large bowl. Add the sugar, zest, pecans and grated carrots, then stir until well combined. Stir in the beaten eggs and oil, then mix well.</font></span><br /><br /><br /><span><font size="4">Pour into the prepared cake tin and bake in the oven for 1 hour or until a skewer comes out clean. Transfer to a cooling rack, leave in the tin for 5 minutes, then turn out and leave to cool completely before icing.</font></span><br /><br /><br /><span><font size="4">While it&rsquo;s cooling you can make the topping.</font></span><br /><br /><br /><span><font size="4">Beat 50g of butter in a large bowl with a hand mixer until really soft. Add 200g cream cheese and beat again until well mixed. Sift over 150g icing sugar.</font></span><br /><span><font size="4">In Paul&rsquo;s recipe he then adds 2 tsp orange juice, but I replace this with lemon juice which I used to use in another recipe. Beat until smooth.<br /><br />Spread the topping onto the cake... It&rsquo;s Grandma Mary's Spice Cake with Cream Cheese frosting, or Aunt Mae's Lemon Meringue Pie; it&rsquo;s mom&rsquo;s Two-Minute Fudge, or Mrs Greenbaum's Rugelach. They're the dishes that make our mouths water, the baked goods that set everyone&rsquo;s taste buds tingling in anticipation.&nbsp;</font></span><br /><span><font size="4"><br />In literature, too, food often plays a part. There's Dickens's celebrated plum pudding, triumphantly aflame with brandy in <em>A Christmas Carol</em>; the blancmange (still not sure exactly what that is!) that Jo serves to the ailing Laurie in Louisa May Alcott's <em>Little Women</em>; the exotic allure of Turkish delights offered by the White Witch to tempt Edward in C.S. Everyone always asks for the recipe. It's no secret; you can find it right on the back of any can of Libby's pumpkin. It takes a little time to put together, but it's well worth the effort. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.&nbsp;</span><br /><br /><br /><span><strong>COMBINE</strong>&nbsp;flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.&nbsp;</span><br /><br /><br /><span><strong>BAKE</strong>&nbsp;for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.&nbsp;</span><br /><br /><br /><span><strong>FOR FILLING:</strong></span></font><br /><br /><br /><span><font size="4"><strong>BEAT</strong>&nbsp;cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. This was a&nbsp;<em>first&nbsp;</em>for me in many respects. It is my&nbsp;<em>first</em>&nbsp;book with my new publishers and my&nbsp;<em>first</em>&nbsp;novel in the romantic suspense genre.</span><br /><span>Like all my books, 'The Dangerous Gift' doesn't fit neatly into the genre. The romance and mystery elements are key to all three books. Still I think it's important to like what you write. They were a faithless lot at the best of times, the reason she&rsquo;d left the States after five long years. Along with some explanation as to why Stephen had gone AWOL and seemed to be letting Matt make all the decisions. Perhaps he didn&rsquo;t feel able to stand up to him? Or maybe he was intimidated by his older brother&rsquo;s success.</span><br /><span style=""></span><br /><span style=""></span> <span style="">According to the tabloids, Stephen was abroad a lot of the time, a playboy who basically partied and shopped his way around Europe with the family money. Why her sister had fallen for him she couldn&rsquo;t understand. At thirty, Matt was older by seven years, a famous music producer who was hardly ever out of the press, despite his attempts to evade the spotlight. Snapping pictures of his children was a rabid hobby for British journos and there were rumours of a new girlfriend every week, although you couldn&rsquo;t believe everything you read in the papers. I spend most of my time in Converses, flip-flops or riding boots, but I do like special shoes for special occasions. So with the dress sorted I hit the next problem, I was really struggling to find the right pair of shoes to complement it.
